"Modern vietnamese food is what they present themselves as. The atmosphere was nice and the service wasn't bad. The food, on the other hand, was somewhat disappointing. I was looking forward to the sweet bread, but when it came out, it was burnt to the point there it left an awful bitter taste in your mouth. The crispy pork ears were pretty good with a very tangy sour taste profile. The pork shoulder felt somewhat overpriced for what it was. The tamarind marinade was on point, but the pork shoulder was thin and had been slightly overcooked, making it very chewy. Overall, it was an okay experience, but it felt more like the food had to be paired with alcohol and didn't offer much on its own."
"Incredible experience! I wish Denver had more chef owned places like this. The reimagining of traditional Vietnamese dishes was so thoughtful and delicious. My favorite and maybe most underrated dishes were the beef fat with toast (every flavor of pho slathered onto toast) and the soft scrambled eggs with rice. Lo and George were incredible bartenders, so friendly, knowledgeable and fun to engage with. 10/10 recommend!"
"Had high expectations for this place and was still blown away. Probably the best meal I've had in Denver and I think this place can compete with the best in any city. Charred cabbage was a surprising standout, and the hamachi collar and pork shoulder were both incredibly flavorful and well-balanced entrees. Only knock I have is that the toast with the herbed fat tasted a little too charred and the decor itself feels a little bland (although the disco balls in the bathroom were fun), but overall this was a fantastic experience and I will definitely be returning in the future"
"Looking for great modern Vietnamese food? This is your only option in Denver. Loved the entrees and the hot appetizers. The cold ones were a bit too seasoned for me, but out waiter fixed it right up. Definitely a 5-star experience, especially with their amazing hamachi collar!"
"Everything we have gotten here has been great. The soft egg is one of my favorites. We also snagged a bag of cardamom shortbread cookies and it was ridiculously good. I can’t wait till they open the bakery! Shrimp toast was also delicious. Get here early for happy hour too! Soft egg for $9 is a steal!"
