"Needed some knives sharpened so I looked up local places. Sonoma Cutlery had some good reviews and the sharpening was priced nice. I decided to take only 1 of the knives for test to see how good they would do. The shop has a great selection of knives and the individual that helped me was extremely professional and polite. It took from Thursday when I dropped it off till Tuesday to be done. I don't know if that's good, as the time didn't matter to me but trying to put all the details. I came to pick it up and again, met with extreme professionalism. I didn't take a good look at the knife until I got home. Based off what I got, I would not feel comfortable bringing my nice knives here. They took off a lot of material and it was uneven on one side. If you look at the pictures you can see. I actually have 2 of the same knife, one way purchased from williams sonoma. The scratches on the blades were there already. I decided to get myself a whetstone and try my hand at it since I wasn't going to take any more knives there. I don't know which knife is sharper as they both are sharp, but the one I did (took about 15 mins to sharpen) looks much nicer and closer to how it should look. Pros: local, professional, great knife selection, great location. Cons: I can only really speak on the sharpening service as everything else I experienced was good. I would send people their way for business but will warn them not to use the sharpening service based off my experience. The last picture is right before I dropped it off."
"Great selection. Pretty good sharpening. But beware: they will sharpen your Japanese knives the same way they sharpen European knives, with a symmetrical edge. If you want to maintain the asymmetrical edge on Japanese knives, look elsewhere."
"Fantastic customer service and knowledgeable staff. I took my grandfather's carbon steel chef knife to them for sharpening, and they expertly re-profiled the knife so that it was cutting like the day it was made. I have purchased several knives from them, some as gifts, and some for my self. I have seen carbon steel knives there, which are my personal favorite, but I've also gotten some excellent stainless steel knives there as well. I recommend this store to professionals and beginners alike."
