"Unapologetically if I don't taste brine on seafood I am dissatisfied and disappointed. If I don't taste brine then I think the worst. Brine means freshness, means freshly caught. It is but a thin and ultimately crucial link to the Sea... Without it, I'm eating limp fish. Clams are by far the best though here."
