We take the extra step of dry aging our beef in-house to extract its best qualities and butcher it on site to control provenance.
When it comes to seafood, we work closely with fishermen and women and other seafood producers to know the exact day our fish was caught and the circumstances in which it made its journey to us. By using simple techniques executed perfectly, we allow our produce to shine.
One of the highlights of dining at Rockpool Bar & Grill is our wood-fire grill fueled by ironbark. This method of cooking emphasizes the individual characteristics of different cuts and breeds of beef, resulting in a truly unique and flavorful experience.
Behind the scenes, our culinary team is led by Culinary Director Corey Costelloe, who has been with Rockpool Bar & Grill since its opening in Sydney in 2009. Executive Chef Santiago Aristizabal, who started as a Junior Chef in 2009, has risen through the ranks under Corey's tutelage and now oversees all three Rockpool restaurants. Corey also works closely with Head Chefs at Rockpool Melbourne and Perth, Declan Carroll and Brendan Owens, respectively, to ensure our commitment to provenance and Australia's finest produce is upheld and celebrated.

"Not only is this one of the best menus in Sydney dining, they have an incredible cellar, along with a stunning backdrop. I cannot recommend Rockpool B&G enough. Its a huge menu, however you can't really go wrong. Desserts are lacking, but the savoury menu more than makes up for that. If you go on a Friday night they serve the date tart which is exceptional."
"We had the upstair seats since I booked it for a friends birthday event. This place has a $100 minimum spent per person and I didn’t see this from the website, I got the memo after making the reservation via the email. Having said that, it was easy to reach the minimum since everything was reasonably priced. The bread and butter was nice to start. The quality of the meat was top notch (we were recommended the rib eye cut and that one was really good). Endless choice for condiments. The roasted pumpkin was very good choice for the sides. However, the best dish of the night has to be the bone marrow!! The abalone pasta was ok and the steak tartare was underwhelming. Also, the chips served for the tartare could possibly be from thinly cuts which makes it a bit questionable, in terms of presentation. Cocktails were nice, their version of a tequila shot was very well done. Overall the service was very good, we did ask for distilled water only to be served sparkling but they staff was happy to change it. The view from the balcony was nice. The place is more darker lit than most places but it makes the place feel more calming."
"The star here for me are the scallops, refreshing apple sorbet and the complimentary birthday cupcake they gave us (so light and fluffy). The wine recommendations and service are also attentive and on point although they refused to sing when I requested they surprise my partner LOL. My bf enjoyed the steak and the variety of accompaniments. The ambiance is perfect for date night: romantic and moody. Tip: buy the gourmet gift card when it’s on sale and use it here!"
"Dark dining hall. Very grand decor. Bar is even darker but available for dining. Wait Staff is courteous and fast. Kitchen is a bit slow as dishes came course after course with lengthy interval. I enjoyed the marrow salad. Very special idea. Could use a bit more leaves though. Hand cut chips and wagyu gravy were brilliant. Chips has little crunchy bits and can toss in gravy and spread on steak. We got two topsides from different price ranges but cannot quite tell the difference. They both the cheapest in their range. Meats is good but lots of tendon fibers in both."
"Stunning food and the inside of the building is spectacular. My steak was perfect and the sides were all delicious. The staff were very attentive although there were some inconsistencies with our drinks. The first waiter recommended a martini and getting that martini again seemed impossible. Was a great evening and a must for a special occasion."
