"So I'm not gonna lie. My kids go to Hudson school and I drive by that carnicera and didn't think much of it. I mean it's Hudson Small Town not much so I never gave it a thought. So today decided to just give it a try. It's very modest yet offers up a wide variety of products. I stopped there to get some fajita meat for tonight's diner. Prices are pretty decent and they're very welcoming in there. Now I wouldn't write that much more about it except they do serve cooked meals. And let me tell you I was surprised to find out they sold Barbacoa there. The man was so confident about his product he went to the back and brought In a sample some of that Barbacoa and soon as that goodness touches my tongue I knew I wanted more. Took a whole pound of it. And let me tell you he says they cook it for 10 to 11 hours and they steam it first. No wonder it was so tender and hardly any fat. Now this is my new spot. He did tell me I've got to try their burgers too which I will next time. Cooked some of that fajita beef and the meat quality is leagues above anything around the Brighton and fort Lupton area. Not even close. Definitely recommend this place. Hudson is very surprising for the quality establishments in this small little town."
