"Delicious. I'm so glad I took photos before I started or there would be none. Great customer service. Delicious sandwiches. This one is the train wreck hold the peppers. What was absolutely amazing was the chips, thick and delicious. About half way through I decided to try dipping one in the adjus. Oh my. Delicious. I may have a hard time trying others. They have extended hours Friday and Saturday till 8. Most food trucks in Nampa or only open a short time time midday. Go give Boxcar Bistro a try."

"Had them come to my company a couple months ago, amazing full menu, everyone was happy. Had them come back today and they didn’t even mention they were going to serve a limited menu with only one big thing from the full menu and another choice of your own meat, bread, sauce with prices close to $20 per sandwich. Some walked away, some ordered."

"This lady is the most down to earth, most creative person I’ve ever met. She told me she has 5 kids and got this food truck up and running all by herself. Now I’m a super picky eater. I can’t have tomatoes or anything with a gross texture, she handed me a sandwich WITH tomatoes on it… BEST SANDWICH IVE EVER HAD! Fresh ingredients, built right there. She did ask me if I wanted no tomatoes but promised me it would taste amazing with them. I’m glad I took her word. This place gets 20 stars if you ask me. Locally owned, fresh ingredients and cupcakes!! Are you kidding? Best place for lunch or dinner by far. Also this sandwich kept me full until the next day. I literally couldn’t eat breakfast because I was still full from my amazing boxcar dinner! 100/10 would recommend."

"Fun fact, the owner of this food truck also has some serious baking skills! We had a last minute cancellation for our caterer for a work celebration and she willingly made 60 specialty cupcakes for us with just 24 hours notice. Excellent customer service, amazing quality, unbelievable presentation!"
