"Experienced a 7-course dinner here. We had great expectations because we loved Lilia which is related to Republica. Unfortunately it didn’t measure up. The creativity of the dishes, staff and service were appreciated. The tastes of the food are a mixed bag. Considering the cost of the ingredients which 1/3 are beans and tortillas, and the tiny portion size, $300+ (with tips) for two was not worth it at all. That amount doesn’t include alcohol, although the drinks were good. This is the 1st tasting menu restaurant we left feeling dissatisfied. They should either lower the price or add more value in each dish whether it’s the ingredients or portion size."
"Finally tried Republica's 10 course tasting menu with friends and was so glad we did. The staff was able to accommodate both vegetarian AND halal diets, which was amazing and took the guesswork of knowing whether someone could eat something out of the meal. Every bite we ate was delicious and creative, and learning the inspiration of each for and knowing that we were eating the same ingredients ancient civilizations was really cool. I was the sole omnivore and fully enjoyed the vegetarian tasting menu alongside my group. Only cons was that the kitchen can get a little backed up when there's a large group (there was a ginormous bday group next to us) so my group ended up waiting a bit in between bites towards the end. This is also one of those tasting menus where it doesn't completely fill you up, even with the 10 course. I guess that's how it's supposed to be and we should always be wary of over eating. Regardless, it was still such a great experience that I'll be back to try their normal menu!"
"Amazing take on Mexican food and thoughtful representation of the culture's ingredients. The 10 courses definitely are filling enough and well balanced in taste. Their menu changes extremely often that you'll want to come back for a completely new experience. The price was relatively less than other tasting menus but is reasonable to how much effort the chefs put into their work. Would recommend to anyone who wants a whole new take on Mexican cuisine!"
"Was here on a business trip and wanted to try a prix fixe menu restaurant. The service was impeccable. The food was delicious and beautifully presented. Some of the dish was a bit salty and the tripe was a bit bitter for my taste. The drinks were delicious as well. I had the 7 course prix fixe but I should have gotten the 10. Would I come back? Maybe…"
