Our chef, Tim, is nothing short of amazing. With over 20 years of professional cooking experience, his reputation precedes him. Tim's culinary journey began in an Italian restaurant in Toorak, where he honed his skills during his apprenticeship. He then worked under renowned chefs Greg Malouf and Harry Hajisava at O’Connells Hotel in South Melbourne.

Tim's career continued to flourish as he worked at esteemed establishments such as Sails on the Bay in Elwood, The Provincial Hotel in Fitzroy, The Exchange Hotel in Port Melbourne, and The Station Hotel in Footscray. It was during his time at The Exchange Hotel that his chicken Parma gained recognition as one of Melbourne's best.

After spending the past four years in food procurement, Tim is now ready and excited to embark on a new adventure as the owner of his very own pub in regional Victoria. His signature go-to meal is a perfectly cooked steak, accompanied by crispy chips and a delectable béarnaise sauce.

Lauren, Tim's wife, supports him wholeheartedly at The Albion. With a background in medical laboratory science, she has now dedicated her time to ensuring the success of the establishment. Lauren's passion for landscape photography can be seen in the artwork adorning the walls of our restaurant and bar. She is also working on opening her own gallery at The Albion later this year.
