"Full Transparency here. I pulled into Buccee’s so I could get a brisket sandwich and was immediately reminded of the lunacy that is the glorified truck stop spectacle so many love and adore. I turned around and hit the first BBQ joint that I could find and it was Billy’s. Billy’s BBQ was a few notches above the standard BBQ spot experience. The Service - Average. They greeted me and said goodbye, but it wasn’t with a smile. I’m not snow bunny soft so I didn’t take offense. The Food - Above Average. Chopped Beef Sandwhich with pickles and light sauce. One meant plate with sausage, slaw, and pinto beans. The chopped beef sandwich was a bit on the salty side but had plenty of flavor. I requested light BBQ sauce which likely would’ve balanced out the salt. !!THE SAUSGE IS EPIC!! It’s a beef blend sausage they make in house with their own seasonings. Blended twice so the texture was amazing and it snapped first bite. Not chewy. Its flavor is out of this world. YOU MUST TRY IT. Slaw was home made and slightly above average with a hint of sweet and pepper. Beans tasted like ranch style beans out of the can. Jokes on them if so, because I love ranch style beans. Atmosphere is pretty cool, tons of locals. A group of men sitting around drinking tea and talking. Deer heads are abundant and hanging on the walls. Golden age of country playing on the radio. It was what you’d expect from this area of Texas. Overall 9.75 out of 10!"

"I ordered a stuffed potato with chopped beef. It could have been a little hotter but it was good. No need for BBQ sauce. Good BBQ doesn't need any. The manager gave me a piece of sausage to taste and it was awesome. Great flavor! Just might get some for the drive home."

"Great BBQ. Stopped in on our way to Houston from Austin. Got there when they opened and within 15 minutes people kept coming in (always a good sign) Not fancy but BBQ made from the heart. We always like to try a little of everything. Ordered Pork ribs, brisket, turkey breast, sausage and potato salad. All were very good.."

"Too hot too cook tonight so decided to try Billies. What a great decision! For our 3 meat plate we chose brisket, ribs and turkey. All of the meats were tender, moist and delicious and they even threw in some of their home-made beef sausage for us to try. The sides of beans and potato salad were tasty, as well. Definitely a must stop for great BBQ!"
