"perfect little gem of a sandwich place! I’ve been ordering pretty much weekly (and sometimes twice a week!) since discovering this truck, and I’ve never been disappointed. Everything is 10/10 and it’s so fun to see what creative sandwich/soup is on the board for the week! The regular menu is amazing too! The best part is the incredible selection of vegetarian options. Service is so friendly, I order ahead and barely walk up to the window and they already have my bag in hand ready to give me. I haven’t eaten at a chain sandwich place since discovering Parasol, and won’t eat at one again as long as it’s around!"

"WOW! I don't crave sandwiches often but I probably will now. This food truck is incredible at sandwiches. I don't think they do sides well but I can live with that. The chimichurri steak sandwich has a Bánh mì flare that is wonderful. The Schnitzel is absolutely gigantic and overflows on the bun which is everything I didn't know I needed. Perfect sauce and brioche combo for the Schnitzel. And the B.L.A.S.T. bacon lettuce avocado sprouts and tomato sandwich was the perfect balance of everything on there, not one ingredient was out of proportion. The best thing about this place is that the fillings are plentiful and the bread does not overpower the sandwich. The mac and cheese was extremely disappointing, very dry noodles, little cheese sauce puddled at the bottom but not enough to cover the portion so skip that. The house chips that come with them are nice crispy and decently seasoned. The real reason you should go here is to try a delicious sandwich or three and leave the rest behind. We will definitely be coming back here more often."

"The best sandwiches I've had from any commercial sandwich shop. The quality, passion, creativity, love, and fun shine through with the sandwiches, the specials, everything! There are times when I will get so excited about the food, I forget to snap a photo. If you are ever in Buda, passing through, or even if you live up the road, you would be remiss as a foodie to not come here. As you can tell, I've been here several times. You cannot go wrong here!"
