Originally started at a family-owned produce stand in Hillsboro, Oregon, Roasted Hatch Chiles quickly became popular for its delicious and spicy Hatch Green Chiles. The institution now operates a mobile unit called the "Hatch Wagon" equipped with a walk-in cooler, roaster, processing kitchen, and freezer. They travel around the Northwest, offering fresh roasted Hatch Chiles in four varieties: NM 64 (mild), Big Jim (medium), Sandia (hot), and Lumbre X-HOT. Customers can purchase these chiles in 25 lb cases or 40 lb burlap sacks. The institution also plans to expand their menu to include various Hatch chile dishes.
