The restaurant uses original wheat flour from Hokkaido to create chewy and sticky noodles for their Tsukemen and Ramen dishes. Kajita soy sauce, aged for 18 months, provides richness and flavor to the soup. Dried seafood powder adds depth and complexity to the soup base. Tsukemen, a dipping noodles dish, is a signature offering at Shugetsu, where noodles are handmade daily for freshness and quality. The restaurant does not use MSG in their products, prioritizing natural and safe ingredients.
