"Im writing this to hopefully gain the attention of the owners/bakers of this establishment. You have a bakery in a neighbourhood were a large amount of the population has grown up with traditional sourdough bread. Meaning the standards in terms of bread, are pretty high. So deciding not to make that in this neighborhood is a horrible mistake. And the owner/management should reconsider. Every time I step in, I am overwhelmed with disappointment, because everything is just the same in terms of texture and flavor. You claim to make “sourdough” bread, but what you make is NOT sourdough bread, because clearly you have skipped a few steps to hasten the process of making it. Therefore creating a weak and non-existent crust. I assure you that if you make the smart decision and craft REAL sourdough bread, you will have LINES in your bakery wanting it and eventually selling out of it on a daily basis. I have to ride to Brooklyn to get proper sourdough bread, because the bakeries in ASTORIA, have failed miserably to make proper bread"
