Prep and Pastry is a charming bakery, bar, cafe, and restaurant located at 313 North Gilbert Road in Gilbert, Arizona. Our philosophy is that food should not only be delicious, but also beautiful. Our new American brunch menu features modern cocktails, flavorful dishes, and warm flaky pastries that will make you feel right at home.
Founded in 2014, Prep and Pastry was the first concept created by Ares Collective, a company established by Nathan Ares. Since then, Ares Collective has expanded to include four sister concepts and six locations throughout Arizona, including Tucson, Scottsdale, and our newest location in Gilbert.
In addition to Prep and Pastry, Ares Collective also owns Commoner & Co, August Rhodes Bakery, and Flora's Market Run. Commoner & Co is a fine dining concept known for its decadent evening dinners and weekend brunch menu. August Rhodes Bakery, originally a pop-up concept, now has a permanent home at Flora's Market Run, which serves as a grocery store, cafe, bakery, and restaurant, providing a staple in the Tucson community.

"Pretty solid breakfast venue. My party got the classic French toast, plain Jane pancakes, and salmon hash with a couple of drinks. All were top notch. The pancakes were incredibly soft. French toast was perfectly flavorful. Hash had a great balance of ingredients and the creamy horseradish added a fantastic touch. All around stellar. Mimosa options are quite broad, we'll definitely be back! 5* all around."
"What an AWESOME experience to have a cute brunch by yourself or your loved ones. Perfectly located in downtown Gilbert, this dog & kid friendly bakery/brunch restaurant provides amazing food with the best service. There are other locations in the valley but this spot is quite perfect here in Gilbert. The menu for the restaurant has some breakfast classics that also have an elevated twist. You have to try the coffee menu! We got the rose latte and it was divine. Finally, we were over the moon in regard to service. You are immediately greeted and our party did not have to wait long at all to get our table. Also, it is a rotating waiting staff process so you are assisted by wonderful staff who frequently check on you. I have to shoutout Sophia who was so sweet and kind while hosting us. Highly highly recommend!"
"The vibe of this place is really good with high ceilings it is a proper brunch spot to hangout with small or large groups. Food was really good we ordered French toast and grilled cheese. We loved the grilled cheese and tomato bisque. French toast needs some more fruits to cut down the sweetness as it’s very sweet. The potatoes on the side were bland lack of flavor. Overall we loved the taste and flavors. Prep and pastry is a very busy place over weekends. The street seems to be full of restaurants it’s was very busy over weekend the wait times are longer do make a reservation."
"This was our first visit. We are usually snooze fanatics but no wait for seating had us try something new. We were not disappointed. The potatoes were the best I've ever had!! The white rose coffee was also sublime. I cannot fault anything. No wait, amazing food, good service and reasonably priced. Will definitely go again"
"Okay there’s good and bad about this place. The good: If it’s your first time they provide you and whoever you’re with a free pastry. That’s amazing and the pastry I got was delicious. Actually both the pastries we received were scrumptious. The wait staff was amazing. Very attentive and always ready to enhance the dining experience. It’s also a very cool venue. I love the way they decorated it. The bad: There’s really not much bad about this place. I really like eggs Benedict’s though and the poblano and pork bebe was not that good. It lacked flavor and the egg was overdone. The meat was dry and the peppers should have been more forward in the dish. That being said just stay away from this particular dish and go with the shakshuka or the smoked salmon plate."
