In Reverend Knopwood's diary, Tasmania's first Chaplain, he mentioned dining with friends in 1804 and enjoying emu as the "piece de resistance." While our menus have evolved over the years, one thing remains constant – food is always better when shared with friends. Today, we proudly source locally grown ingredients to create a menu that reimagines and refines Tasmania's traditional family dishes, paying homage to our past and showcasing the best of Tasmanian produce.

Under the guidance of Head Chef Alvin Sim, our menu revolves around Tasmania's pure and wholesome ingredients. From draught beer to the finest wine and spirits, our bar team offers a wide selection in a refined watering hole adorned with newspaper headlines from decades past. Every Friday and Saturday night, you can enjoy live music from Tasmania's top performers, creating a vibrant atmosphere from 6:00pm to 9:00pm.

For those seeking a more sophisticated and intimate experience, our Evolve Spirits Bar is a treasure trove of rare and premium spirits. With an ornate design and an extensive list of local and international distilleries, it is the perfect place to celebrate the emergence of premium distilling in Tasmania. In fact, we were thrilled to be awarded Tasmania's Cocktail Bar of the Year and Australia's Hotel Bar of the Year at the Bartender Magazine Australian Bar Awards in September 2021, building on our previous accolades in 2019.

Our Lounge is a special space where stories come alive. Gather around the open fire and indulge in a pre-dinner crisp white wine with Pacific oysters, allowing the fables to flow.
