At the heart of Taste Baguette is the inspiring story of Hieu Luong, who began his journey in baking at just 13 years old. Living opposite a bakery in Saigon, Hieu developed a passion for the trade that would shape his future. When the Luong family had to escape the Vietnam War and seek refuge in an Indonesian camp, Hieu wasted no time and started his first bakery. With a hand-built wood fire oven and a tinned roof, he produced bread that was in high demand on the island.

In 1987, Hieu met Madeleine while studying IT at university. After graduating, Hieu's first job at Westpac was interrupted by a disappointing lunchtime sandwich. This experience led him to establish what would eventually become Taste Baguette, a series of eateries focused on freshness and the love of baking.

Hieu and Madeleine embarked on a journey to learn various techniques from renowned bakehouses around the world. Armed with newfound knowledge, they returned home and opened their first bakery in 1989. Over the years, they expanded and now boast 17 Taste Baguette eateries across Sydney, Adelaide, and Melbourne.
