Amine sufferers should ask him directly how they can minimise their amines, and which meat to buy on which days. He can even make up a special batch of low allergy sausages, given 24 hours notice and a 3kg minimum batch. So if you are on Philip Island, go to the little arcade off the Woolies to find the Heard of Cowes butchers.
