"What a cool bar! My husband and I first went here 7 years ago on our first visit to Sydney. We loved it so much that we decided to check it out again on this visit. It did not disappoint! We went twice during our 6 days in Sydney. Phoebe was our bartender both times and she was wonderful. I remember our bartender 7 years ago was also great. Merivale clearly has high standards for their employees. Phoebe also reminded us about Mr. Wong’s which we ended up booking the next day and when we came back we decided to stop by The Establishment for a drink first. She was so sweet to then offer to take us in through a back entrance to Mr. Wong’s so that we did not have to walk all the way around. The Establishment is beautiful, the drinks are great but the staff is what really makes it! Thank you Phoebe for taking great care of us!"

"Bar with a dance twist! Showed up on a salsa night, place was packed and filled with post after hour corporate crowd. Danced all night until the place was fully packed. Although they didn’t have much of good wine selection, we still have a fun night here."
