Chef Koji Ishiyama's journey began in the picturesque town of Yokohama, Japan. Starting his career at the young age of 18 in Yokohama's fish market, he honed his fish cutting skills and perfected his craft. After years of apprenticeship and experience, he was appointed as the Head Chef at Fujiyoshi Hotel in Shizuoka prefecture.
In 2004, Chef Koji Ishiyama embarked on a new adventure and arrived in Sydney, Australia with a working holiday visa. Despite the language barrier, he immersed himself in his work as a chef in the prestigious Masuya group, where he mastered the art of purchasing the freshest fish at the Sydney fish market.
His culinary journey took him to Greece in 2008, where he worked as a sushi chef at the award-winning fine dining restaurant, Nobu. There, he expanded his skills and knowledge in Japanese fusion cuisine.
In 2009, Chef Koji Ishiyama returned to Sydney and became the Head Chef at Iiza izakaya dining. His creations for the restaurant were even published in "The Daily Telegraph." Finally, in 2014, he fulfilled his dream and opened his own dining restaurant, Ishiyama Japanese Dining, in Campsie. Here, he continues to follow his passion for creating delicious Japanese cuisine that caters to everyone's taste buds.

Reviews
"We came here a couple of time for lunch. Not bad as you get your own booth if there’s any available. Love how you dine in privacy with touch screen menu to order. Average price as any other Japanese restaurant and food are decent for a local joint."
"Very disappointing. Food tasted bland and had not much flavour, big mistake visiting here for lunch I should have went to different restaurant. Will never visit again. Also service was poor you have to get your own water from water dispenser or buy bottled water here. Most restaurants give you water in glass bottle or plastic bottle but here you need to get your own water from tap. I was seated too far so I just bought bottled water. I drink lot of water when eating. Also waitresses never greet you. It is like they don’t want to work there."
"The chicken namban bento was very disappointing. Chicken katsu is super dry. The sauce is nothing close to being namban sauce. Found a piece if hard plastic in the food and the staff offered to replace it. However I won’t risk my teeth safety again going back to this place."
