Ramen Nobu was born out of our passion to introduce the vibrant ramen culture to the people of Cairns. Through our authentic ramen range, we aim to showcase the diverse flavors and styles of this beloved Japanese dish. Our menu features a variety of ramen options, including:

The history of ramen dates back to the Meiji Era, when the first ramen was imported from China. However, it wasn't until 1910 that Japanese ramen as we know it today started to gain popularity. Kan'ichi Ozaki, a retired customs officer, opened a Chinese restaurant in Tokyo and introduced Shoyu Ramen at an affordable price. This marked the beginning of the ramen boom in Japan.
Tonkotsu Ramen, known for its pork broth base, originated from a chef's mistake in 1947. The soup was accidentally cooked with intense heat, resulting in a creamy and white broth. Recognizing its unique flavor, the chef decided to serve it as Tonkotsu Ramen, which has since become a specialty of Kyushu, a region in western Japan.
Tan Tan Ramen, on the other hand, has its roots in Sichuan, China. It was brought to Japan by renowned chef Chen Jianmin, who adapted the dish to suit Japanese taste buds by incorporating chili oil and sesame paste in the soup. After World War II, when Japan faced economic hardship, ramen gained popularity in black markets due to its affordability. This led to the development of various regional ramen styles across Japan, each showcasing local ingredients and flavors.

"Has a good atomsphere due to the lane it is located in.. nothing to do with owners effort.. food isnt kept at proper temperatures so im very surprised noone has been made sick... Rusty fridges and bain-marie. Owner/workers was very rude and not very helpful aswell as having bo vegan/vegetarian option available other than gyoza and spring rolls which is extremely overpriced considering nothing is homemade, if it is, it is made by the owners of the ramen shop in cairns central. Oh and he doesnt like to pay his workers so thats probably why the service is so subpar."
"Underrated Ramen shop. The Tonkotsu Ramen was very delicious and the pork gyozas and/or the karaage chicken as a side are a very good choice. The food can take a bit long when busy because there is usually 1 person working but it’s really worth the wait. When it’s not really busy it takes around 5 minutes. Very good atmosphere as well."
"Not sure what the hype is about. Pretty average. Ordered both miso and tonkotsu. Chicken breast in miso was just okay.. Pork in the tonkotsu was a bit tough. Cooking was super slow even when it was quiet, Miso soup was too salty and tonkotsu was too oily."

"Great shop actual Japanese owners. And lantern lane is very cool. Really enjoyed my food great soup base in my ramen bowl. Food was prepared in a reasonable time and was brought to our table with in 5 mins of sitting down was surprised by the excellent quality of the food with in a shopping centre food court. Will recommend and revisit we I get the chance. Also thanks to woman who served us very helpful and extremely polite. Thanks again"
