At Hot Wok, we understand the importance of cooking with a wok and want to share the secrets with you. Step one is seasoning your wok. Before using your new wok, it is essential to scrub it with hot soapy water and steel wool to remove any film from the factory. After rinsing with hot water, place the wok over low heat until all the water has evaporated. Next, heat the wok on high for 30-60 seconds until piping-hot, and then pour in oil, swirling to coat. This process is repeated until your wok develops a brown or black coating, giving it the perfect seasoning. For an added touch, stir-fry ginger and spring onions in the oil to remove any metallic flavor.
Step two involves heating your wok. Ensure all your ingredients are chopped and ready to go before heating the wok. Bring any meat to room temperature and heat the wok over medium-high heat. To check if the wok is hot enough, flick a drop of water into it – if it evaporates immediately, you're good to go.
Step three is all about cooking in your wok. Always add cold oil to the hot wok, using a peanut or vegetable oil that can withstand high heat. Avoid using olive oil or butter. Cook your ingredients in batches, gently rocking the wok to create movement and stir-frying with a wok chan, a flat-bottomed spoon. It's crucial not to overcrowd the wok, as this will lower the temperature and result in braising rather than frying the food.
Cleaning your wok is step four. Rinse it under hot water and avoid using soap. If any food remains stuck to the sides, sprinkle salt liberally and rub with a paper towel. Rinse the wok and place it on the stove over low heat until dry. To prevent rusting, dip a paper towel in oil and rub it over the surface of the wok before storing.

"If there is a half star I would give half. I ordered fired noodle, dumpling(Gyoza) and milk tea for kids. Milk tea is full of ice!! It's all gone by my 5 years old few sips. Until I finished whole meal the ice is still full to the cup top. Definitely not worth your money. Fried noodle is not nice either. Beef is so thick,hard to chew. Prawn in the noodle is really average that you can tell those were the frozen prawn you can buy from any supermarket. Veggie in the noodle is not cooked through. Gyoza is really below average too. I am expecting the bottom of the Gyoza is fried as all the other Gyoza...not really... About service: I went in the restaurant , can't find any clean table . I waited for a while , still no one comes to clean . I had to give a yell to the guy playing his phone in the kitchen. I feel bad for the next table came after us . They have ordered something right after me. Until we finished our food , it's still not ready. The lady asked if they have forgotten her order when I was walking out of the door. I talked to the owner about the Milk Tea issue . I was told " you didn't ask for less ice" what a joke! So the Milk tea ice is full cut as standard... The half star is for the location. Convenient location just out of K-mart. but running like this, please give this space to some good business."
