Our chef, Sue, was classically trained at SUAN DUSIT UNIVERSITY in Bangkok, Thailand, and has been cooking traditional family recipes passed down for generations. After completing an internship at The Gaylord Opryland Resort & Spa Convention Center in Nashville, Tennessee, Sue knew she wanted to open her own restaurant in the United States. She eventually settled in Pennsylvania, where she met her husband and opened a food concession at the Pocono Bazaar Flea Market.

The current brick building, built in 1855, exudes Revival Connecticut Colonial architecture and has been a staple in the community for over 160 years. Originally serving as a hotel, restaurant, saloon, post office, and stage coach stop, the Dimmick Inn has a rich history filled with colorful characters, including Frances (Fannie) Dimmick, who managed the inn single-handedly for over forty years. Today, the Dimmick Inn continues to uphold its historic legacy under the ownership of Andrew Jorgenson, who is dedicated to preserving and restoring this iconic structure. With a commitment to honoring the past while providing exceptional dining experiences, the Dimmick Inn invites guests to enjoy delicious meals and drinks in a setting steeped in history.
