Cactus Blue is a lively Mexican restaurant located at 4030 Chestnut Street in Emmaus, Pennsylvania. Since 2004, we have been serving up a variety of fresh and festive Mexican dishes for our customers to enjoy. Our restaurant is open Tuesday through Saturday from 11am to 8pm for both dine-in and take-out options. At Cactus Blue, we offer all the classic Mexican dishes as well as vegetarian and vegan options for those with dietary restrictions. In addition to our restaurant location, our food truck travels throughout the Lehigh Valley and can be booked for both public and private events. We also provide catering services for events of all sizes, from small gatherings to large warehouse parties.
