"Simmer Down bar and lounge is top tier and up and coming staple of the Wilmington hospitality scene. The level of service, quality of drinks, and atmosphere are all outstanding. Being with Tom and Karen, hearing about the concept, and seeing their passion show how exciting this place is! Stop in, treat yourself, and ask for Tom and Karen to concoct some of their favorite cocktails!!! Don’t forget snacks from their French Restaurant just upstairs."

"Let’s give a rundown because this place deserves more reviews and likely doesn’t get them because the hotel has so many nice options and people get them confused. Simmer down is the speakeasy under The Quoin Hotel, you enter through the hotel from entrance and then take the stairs on the right down (the hotel staff also can point you in the right direction). They have a wide variety of different cocktails and very experienced mixologists who make excellent and well balanced drinks. It can get very busy and if you walk in it’s kind of “find a seat where you can”, but it has a very calm vibe that’s also very social. The one thing I want to give them extra credit for is their mocktails. Best mocktails I’ve had in years. Usually places just throw herbs and seltzer together and call it a drink but this place actually put effort into making something special. They change seasonally I believe but I had one with dragon in the name which was lime coconut and cherry - so good!"

"We went on a Friday night and really enjoyed ourselves. The atmosphere was great and there was a true speakeasy vibe. The place had a lounge-like layout. Drinks were great and our server was very attentive despite it being a busy time of night. We would definitely go back!"
