"Our waitress was very kind and helpful, but I was pretty bummed about my food. The only warm thing in my burrito was the meat. The cheese in the burrito was still cold and hadn’t been melted. I’m not sure if this was intentional, but it didn’t seem to fit with the flavor the burrito was trying to create. Would have been much better if the burrito had been cooked or at least warmed a little before serving. Only finished about half before just giving up due to lack of flavor and varying temperatures throughout. Disappointed, as this is the second time I’ve had Copal and disliked what I ordered. We will not be giving Copal another try."
"My first time visiting, the restaurant was busy and vibrant, and although there were many people having conversations all around us, it didn't ever sound like we were in a crowded, noisy restaurant. Somehow, it managed to be well-lit, yet cozy. Warm lighting and intimate seating. No glaring industrial lights here! Our server was an absolute delight, she was extremely cordial and friendly, it was like chatting with one of my goddaughters while she was helping me explore vegetarian options. I had my first ever arepas, and they won't be my last. Just completely delicious and flavorful. You can tell the food is made with great care and attention to the quality of the ingredients. Beautiful and delicious. Prices seemed very reasonable to me, especially for the quality of the food (excellent) and portions had options on many items so you can just order what you're able to eat, or choose a couple of options by ordering one each of a few items. (Fantastic if you are a person who has a hard time choosing between favorites!) I'm so glad to see something occupying that space, and I plan to return and recommend to friends and family. Positively stunning experience."
"Got lunch here Roberto suggested the birria tacos and Margaritas. Tacos were absolutely delicious as well as the rice that came with it. The Margaritas were refreshing and smooth. He would give us a detailed description and a history on the food. He was very nice and very passionate about the restaurant. We will definitely come back again!!"
"Not sure why it's billed as a progressive Mexican restaurant but the food was excellent. Had the burrito with chorizo. It was huge. It didn't come with any sides but that was ok as there were plenty of chips and salad to go around. The service was a little slow. We went at 5pm on a Saturday but there were only a few tables with people. It took a few minutes for the waiter to even come say hi and bring the check. However, I do appreciate that they didn't try to rush my large party of 8 out the door after the meal."
"We wanted tried to something different tonight and I mentioned Copal! So happy we did! The food was delicious! Loved the creamy salsa and chicken tinga! The chips were crispy and the salsa had great flavor! We will be back!!"
