The institution started as a food truck in 2020, expanding to a brick and mortar restaurant in Lihue in 2021, and opening a food truck location in Lawai in 2022. The journey continues with plans to open Big Monster Thai in Kapaa in 2023, as well as Big Monster Sushi Bar in Kapaa town. "Friendly staff. Fresh food. The term Monster is a stretch if we're talking about the sizes. Regular sizes at regular sushi prices. Poke bowl hard a little too much sauce for my husband's liking but good flavor. Cucumber could have been a little more crunchy. Ginger And wasabi would have been a nice way to dress up the sushi burrito plate in my opinion. Overall,I would eat hear again"
