About Us

Fulgurances, located at 132 Franklin Street in New York, is a unique and innovative food institution that serves as an incubator for rising chefs. After five successful years in Paris, Fulgurances has opened an outpost in Brooklyn, known as "Fulgurances, Laundromat." Similar to an artist residency, young chefs are invited for a three to six-month program to define and refine their culinary identity. The institution aims to create bridges between Paris and New York, allowing chefs to experience new terroirs and audiences. The seasonal tasting menu reflects New York state's best produce, and gratuities are not required. The Laundromat has hosted talented chefs such as Nazareno Mayol, Nicholas Tamburo, Émile Desmet, Galen, Patrice Demers, and Marie-Josée Beaudoin, and Flor Camorlinga. Each chef brings their unique background and influences to create a diverse and evolving menu. Fulgurances is excited to be part of the vibrant Greenpoint community and looks forward to showcasing the talents of these exceptional chefs.

"Love this place! Very interesting concept with rotating residence chefs. We went for 2 of the recent chefs, chef Galen and Chef Emile. Both menus were amazing! Can't wait for future residence chefs."
"What a great tasting menu. We went for Galen Kennemer menu and what a pleasure. Plates were perfectly executed with flavors that were layered and work all together. Comes a cherry tomato with pickles and dry tomato and the all with an olive oil water and a celery type of flavor. Wow this was very good. Each of the amuse and plate were an explosion of flavor. We had a great time and will come back to experiment more with this concept."
"I’ve come here five times now (date night, family dinner and with friends) and each time it’s been such a great experience. It’s fun to experience different chefs and cuisines. The wine pairing is always on point and the staff is very welcoming and knowledgeable. Our last visit Chef Galen delivered an amazing meal. Highlights included the summer octopus, summer squash, and surprise bonus pork belly. Will keep coming back!"
"Wish I'd known Patrice and Marie-Josee have been at the Laundromat since 11/22, I'd have been there sooner. Fantastically clean flavors, I mean every bite was a lesson in how to let the ingredients shine. No pretention, not even in the plating, knowledge and attentive staff, with a superbly succinct and delicious 'chef's table' menu, which changes often! Don't know how long they'll be there, but try to get there before they leave!"
"I went to the Colby Rasavong menu in late December. It is just not ready for prime time - when I read that this guy plans to open a restaurant called "Bad Idea", I had to agree. It was a real shame since I had enjoyed the restaurant where this chef trained in Nashville. I had to apologize to my friends as we were all hungry after the meal - it was not advertised as vegetarian but apart from a couple meagre pieces of charcuterie and a tiny fish course, there was no protein to speak of. The final rice pasta in broth course was a massive dud, and I simply couldn't believe it. The desserts were also lazy efforts - peanut brittle?! On the positive side, my group enjoyed the quirky wine list (lots under $100) and we had no complaints about the service level."
