Located in the small rural town of KatiKati in the north Island of New Zealand, our bread house is nestled in the beautiful countryside, where we create bread using only natural ingredients, wild yeast, and traditional methods.
At Breadnz, we understand that in a land of fresh produce and open spaces like New Zealand, there is a longing for the taste of bread from the past. With a French/Mediterranean background, our founder developed a deep nostalgia for the flavors and techniques of traditional bread making. This passion led to a journey to the Pyrenees, where they worked alongside Maître Henri, an accomplished baker who shared their love for nature and the essence of life.
The experience in the Pyrenees was extraordinary, and it ignited a deep appreciation for natural leaven bread and the magic that can be created in "The oven and its fire." Returning to New Zealand, our founder dedicated themselves to improving their bread making skills, building their own wood-fired oven, and sourcing the perfect raw materials: spring water, sea salt, and organic flour.
Originally dreaming of building a large wood oven in their town, creating a meeting place for people of all backgrounds, our founder realized the financial and physical demands would be too great. However, they now have their own bread house with a wood oven just opposite their front door, where they bake bread for their family, as well as use it for pizza, baking, roasting, and barbecues.
Now, ready to take the next step, Breadnz aims to pass on the knowledge and experiences gained over the years. Whether you choose to embark on your own bread making journey by following the steps outlined on our website, or join us for a one or two-day course, we invite you to explore the possibilities of controlling the reaction and interaction of basic elements: water, fire, wild yeast, and wheat. "Bread making classes are great! Just got home from a sourdough bread making class we took for a birthday. Henri shared his tips for kneading the dough, mixing proportions, and the right conditions for bread to rise. We baked the bread we made in Henri's wood fired oven, and came home with a bag full of baguettes, knot rolls and loaves of wonderful organic sourdough bread. Was a great experience with Henri and Megan who allowed us to bring our family along to make it a great family outing. Had a fantastic time even though it was humid and raining. His bread making classes are highly recommended for anyone visiting or living in Katikati!"
