Our kombucha is made using traditional methods that have been perfected over 200 years. We steep our black tea with a mixture of sugar and introduce our 'Mother' or SCOBY (Symbiotic Culture Of Yeast & Bacteria) to kickstart the fermentation process. Over the course of 21-25 days, the SCOBY consumes the sugar and increases the acid content of the tea. This creates the base for our kombucha.
After fermentation, we transfer the kombucha into fermentation vessels to undergo a secondary fermentation, similar to the process of making beer. This allows for further flavor development and takes approximately 14 days. Once the kombucha is ready, we carefully blend it with our juices, natural flavors, and even a touch of rosé wine to create the perfect balance of taste and refreshment.
