"Get in while you can. This place is destined to be booked out months in advance. The degustation is amazing. Well designed, an interesting and exciting array of flavours and contrasts, with a few pleasant surprises. The chef Ash is a master of his craft and Kit oversees the dining experience with attentive yet relaxed service that makes you feel at home. A top tier dining experience. "(4.5 stars) Making the jump from Cromer overlooking the Northern Beaches to St Leonards, COYA is now within easy reach for us south-of-the-harbour dwellers. The new split-level restaurant is fronted by a warm yellow bar with blue and white Mediterranean tile splash-back. Up a short flight of stairs you’ll find an intimate dining room edged in floral arrangements. Chef Ashraf Saleh infuses his multi-course modern Australian menus with a west Asian perspective, and is equally as inventive with plant-based dishes as he is with meat and seafood. We opted for the 6-course deluxe menu ($120/person) that opened with one-bite tomato and avocado tarts that exploded liquid horseradish. Mouth suitably excited we moved on to prawn and potato croquettes with a barberry emulsion. Barberry king prawns with sumac and raspberry later in the meal were a highlight, as were the Aleppo pepper dusted-Moreton Bay bug rolls topped with black caviar. While a wine package is available ($100/head) you can get better value choosing yourself. The 2021 Crittenden Estate Peninsula Chardonnay ($80) suited beautifully soft haloumi with tomatoes and a tzatziki fluid gel. The chermoula-spiced square of Blackmore wagyu bolar blade with pickled daikon and cauliflower purée wants a little more from the glass, so consider the jammy 2018 d’Arenberg Custodian Grenache ($62). While never at the expense of flavour, plating is eye-catching all the way to the flower-topped cubes of brightly acidic raspberry jelly at the menu’s rear. For a multi-course menu this sits relatively lightly by holding back on excess carbohydrates: great food and healthy too!"
