"A few weeks ago we purchased scallops and raw shrimp. Perfection. We were proud to serve it. Last week we spent over 100. On a four pound prime rib, for a dinner party. It was beautifully medium rare, cooked according to your directions. But, the amounts of fat and hard gristle was horrifying. At the very most less than one third of the roast was edible. We were disappointed and felt this wonderful butcher shop let us down."
